Although most fruit, vegetables, flowers and herbs are available all year round. I love using ingredients that are in their natural growing season whenever possible.This is because I'm passionate about maximising the flavour and goodness in my cakes.
For example in spring & summer I enjoy incorporating edible flowers such as lavendar, elderflower and rose, as well as making the most of the jewel like luscious summer berries to create not only beautiful, but delicious cakes and flavours that are simply not available on the highstreet.
In autumn and winter, summer berries give way to hedgerow beauties such as blackberries and rosehips, and cakes are flavoured with pumpkins and spiced apples.
As with anything in life - you get what you pay for. Where possible I use organic or fairtrade products, and use only local free-range eggs, happy hens make for much tastier cakes, don't you know!
Quite simply I love to bake, it has been a passion of mine since as far back as I care to remember, The alchemy of bringing together simple ingredients, and watching them transform into a delicious tasty morsel is a sheer magic, and something that never fails to amaze me.
